Baked Halibut with Tropical Fresh Fruit Salsa

WIN_20160825_13_50_45_Pro (4)

We love Halibut (or Cod) for this recipe. 4 Filets coated in honey placed in a baking dish with 1 cup fish or vegetable stock, place in hot oven (400 F) and bake 8-10 minutes or until fish begins to flake. I use 1/4 cup fresh strawberries, 1/4 cup pineapple chunks, one kiwi chunked, 1/4 cup pure Orange juice, 1/4 teaspoon ginger, dash of nutmeg, stir fresh fruit salsa well, optional onions diced.

Remove Halibut add a few scoops of fresh fruit to the top, scrumptious!

  2. I love halibut, but usually go the lemon, tomato, and mayo route with this. I might have to expand my horizons!
