This is a fun dish to put together. Using bamboo shoots, one small can mandarin oranges, 1/2 package ramen noodles (crumbled), cucumber, cubed cooked chicken, carrot strips and an orange-ginger sauce/dressing.
In a mixing/salad bowl add bamboo shoots, oranges and reserve the natural juices (for the sauce/dressing), cut cucumber, cubed chicken, gently toss, add carrot, crumbled ramen noodles (for crunch). In a small bowl add reserved mandarin orange juices, 1/2 teaspoon finely grated ginger root, drizzle of sesame seed oil, dash of rice vinegar, whisk well and add to salad, cover and refrigerate 30 minutes before serving.
