Light Asian Peanut Sauce Noodles

Easy and a fun dish especially delicious for lunch and one of my favorites! You can use any type noodles that you like in this dish. I always prepare them al dente. For the Asian Light Sauce I use 2 tablespoons low sodium soy sauce, 1 tablespoon honey, 1/4 teaspoon grated fresh ginger root, 1/4 cup creamy peanut butter sautéed together for 12 minutes on low heat and continuing to stir to combine.

Add noodles and gently toss. Optional to add green onions/scallions as garnish, if desired.
