Zucchini & Vegetable Turkey Crumble Soup

Hearty and healthy soup using the last of our zucchini’s. I used lean ground turkey (one pound) crumbled and sautéed 6 minutes, drain (very little oils), add into stock pot, 2 cups vegetable broth (low sodium), one zucchini sliced down the middle and cut into bite sized pieces, one celery stalk diced, one carrot diced, 1/2 onion diced finely, one can tomato paste, stir all ingredients well, salt and black pepper, dash of garlic powder, dash of oregano and parsley, cover with a lid, heat should be on low and simmer 20 minutes or until zucchini is tender. (Stir during cooking time-gently).

Don’t forget the cheese, to garnish with.

Enjoy with toasted bread slices, crackers, croutons! We love this soup.

Freezes well also (before simmering, just place in freezer safe containers).

  1. I love soup season! Well, it’s always soup season for me. Making some more tonight with smoked sausage links (cut into moons), great northern beans, homemade beef broth, onions, carrots, tomatoes and spinach with seasonings of course. Yours sounds really good too! xoxo

    1. We had this for supper with garlic toast and fruit salad. Everyone loved it-I really enjoy homemade soups. They are hearty and healthful and super easy to make. I did freeze a batch too! Yay! xoxoxo ccc

  2. I can’t tell you how much I am looking forward to making a big pot of soup, hopefully weather will get cooler so I can. This looks delicous.

    1. Soon my friend the weather will cool down for you to whip up some minestrone soup!!! We had this soup for supper with garlic toast and fruit cup. It was good. My children love soup and it is a light meal for them. xo
