Baked Cod with Sriracha Mayo. Lovely side of Lemon Asparagus. 4 Cod Fillets (Thick), 1/4 scant cup light cream, one teaspoon black pepper, drizzling of canola oil. For the Sriracha Mayo. 3 tablespoons mayonnaise, several dashes Sriracha (to your liking)-chill until ready to serve, mix well. 3/4 cup seasoned bread crumbs. 8 ounces Fresh Thin Asparagus, one lemon juice only, one lemon cut into wedges. Blanch asparagus 3 minutes, remove from heat and drain. Add lemon and a pat of butter to blanched asparagus.
Place cream in a shallow dish add fresh cod fillets and soak for 15 minutes (both sides, add black pepper, if desired). Place each piece of cod in the breadcrumbs and gently coat, transfer to baking sheet pan. Drizzle with canola oil and place into a 425 F hot oven, bake 10-12 minutes or until Cod flakes a bit and is golden brown. Add sriracha mayo on the bottom of plate, add baked Cod Fillet, serve with lemon asparagus and lemon wedges. Makes a lovely meal anytime!
